The name Oltrenero is the combination of two elements that make up the wine’s identity: ‘Oltrepo’, which identify the area it comes from, and ‘Pinot Nero’, which is the varietal used. Handpicked in September, the grapes are gently pressed, the must remains on its lees until July. A liqueur de tirage is added following the traditional method, the fermentation process continues for 24 months until dégorgement and the liqueur d’expédition is added. This allows the wine to obtain the ideal 4 g/L of residual sugars. Pale straw yellow in colour with delicate perlage. On the nose, it displays intense mineral and fruity tones as well as scents of wisteria, elderberry, blackberries, and citrus. The palate matches the aromas on the nose; it is also fresh and elegant.

100% Pinot Noir grapes handpicked and macerated for six to eight hours in order to extract colour from the skins. Fermentation takes place for 12 days and the wine sits on its lees until the following July. Upon completion, liqueur de tirage is added for the conversion to sparkling wine, which continues for 24 months until dégorgement and the addition of liqueur d’expédition to obtain residual sugars of 5 g/l. This sparkling is bright salmon pink in colour, pronounced with classic Pinot Noir notes of soft red fruit and bread crust on the nose and the palate. It is delicate and fresh.
